For a while, the Japanese people lived on seafood and rice wheat that were eaten with chopsticks. Although the prohibition on meat has been lifted, most people still did not eat meat most of the time. It was only in the beginning of the 20th century when the Japanese began eating meat and wagyu beef then became common and famous all over the world.

The younger Japanese generation has been reached by the Western cuisine but the Japanese still prefer the traditional method of eating wagyu beef, wherein the meat are cut into thin slices and cooked traditionally and usually eaten with hashi.

After the advancement of the cultivation of rice, beef was eaten more frequently because the huge number of cattle were raised, fattened and butchered. Also, since the economic conditions have developed, more and more people were able to afford eating beef, which was considered as a luxury back then.

These days, a large number of Kobe beef is raised and produced from Australia and California. In California, the wagyu cattle is raised in less expensive land and they are fed and bred according to the supervision and instruction of Kobe beef. However, when the wagyu cattle is fully raised and set to slaughter, they are sent back to Japan for final raising and feeding. Summer Sale 10 lbs. Ribeye 62% off, click to see price!

Is Kobe Beef a Healthy Choice?

Kobe Beef Marbeling

When you feel like treating yourself or you want to enjoy some special meal with the family, don’t you always end up having a steak meal?  But don’t you feel bad after having one too, because you devoured on red meat and that’s loads of calories adding up to your weight? What would you do if you could enjoy a steak meal and be guilt-free at the same time?  Eat more, right? Then you can do just that by giving Kobe beef steak a try.

Kobe meat is from wagyu cattle breed which were originally raised in Kobe, Japan.  This is why their beef was also called according to their place of origin.  These days though, wagyu cattle are also bred in other countries like the US and Australia, and they produce equally great-tasting wagyu beef.

Wagyu meat is especially flavorful because of its high-density marbling.  However, this is also the reason why its preparation is quite meticulous.  Overcook it and you will end up with a tough, tasteless, and bland meat which has just cost you a fortune.  Overcooking causes the fats to melt and change the quality of the meat, and since wagyu meat is quite fatty, you can imagine how significant the change is.

Now, just because wagyu meat is fatty doesn’t mean it’s bad for your health.  Actually, the great thing about this type of meat is it is high in unsaturated fat, which is good for your health.  Now, you can eat steak without having to feel guilty. Neat, right?

Best Way to Cook Kobe Beef

April 9th, 2010

Chef preparing kobe beef.

Many culinary experts consider Kobe beef as the Holy Grail of beef.  Named after Kobe, a city in Japan where Wagyu cows are famously raised, it remains to be one of the most expensive and tastiest meats in the world.

Now, when you have some Wagyu meat, don’t ever think of preparing it just like your usual Friday-night steak.  This meat has a specially marbled fat.  Its high density would react against the traditional circumstances that steaks are prepared. There’s a need for a more technical approach when cooking this special meat.  This is particularly so when you want to get the best out of it.

The key to preparing the heat for cooking it is the same when you make tuna steaks.  The grill must be extremely hot before you put the meat.  Sear your Wagyu beef for not more than 60 seconds on one side and then flip it on the other side to do the same.  This is the way of sealing the flavor, keeping the searing effect.  Ideally, your meat would be crispy on the outside and tender on the inside.

If you have a thin beef, cut it into extra thin slices after removing it from the heat.  Then, season it with sea salt before serving.  However, if you are preparing a thick slab, you have to sear both sides and then cut it into strips and sear the raw side for 30 seconds more.  Season and then serve immediately.  Remember, never overcook your Wagyu meat.   Also check out the kobe beef recipe section.

Thinking of Preparing Wagyu Beef Yourself?

April 5th, 2010

kobe_beef_appetizer

Kobe beef is very expensive and it could be disheartening to buy some and not be able to prepare it well.  If you wish to try your luck on touching this meat also called as wagyu, right in your very own kitchen, it is very important to have the knowledge of its preparation.  Kobe meat handling is quite sensitive.  This is the reason why for the first-timers, going to a restaurant which specializes in it is often recommended more than preparing it themselves.

As a rule of thumb, wagyu meat must never be overcooked.  Its usual cooking time is 35 percent shorter than your regular beef and when you go beyond it, the meat would end up bland, almost tasteless.  Then you would probably be tempted to hit yourself with a skillet thinking “Is this what I paid hundreds of dollars for?”

If you truly want to try preparing your wagyu beef yourself, then perhaps one of the easiest ways to is make a wagyu beef appetizer.  This way, you will not have to do a lot of cooking.  You are serving it almost rare.

Here’s how to do it:

First, make sure that you freeze your wagyu steaks well.  3 or 4 ounces steaks would do.  Then, slice the meat into paper-thin pieces, cutting across the grain.  Get a serving plate and arrange the meat onto it.  In a saucepan, whisk olive oil, sesame oil, and soy sauce together. Over medium fire, heat it for about three minutes or until it is very hot.  Finally, drizzle the hot mixture over the beef slices to briefly “cook” them.  You can use chives as garnish. Easy, right?

What is Kobe Meat and What’s So Unique About It?

April 1st, 2010

Wagyu Beef

Kobe beef is indeed expensive and quite hard to find.  No wonder it is a legendary delicacy.  It is very distinct for its intensive white marbling of fat and rich buttery taste.  Well, it is also distinct for its price which could range between 100 and 300 dollars per pound!

Now, you may be wondering what’s so special about this meat and why it is so costly.  Let’s start with the basics.  The meat we call Kobe actually comes from the wagyu breed of cattle from Kobe, Japan (thus the name).  However, this breed of cattle has also been raised in the US and other parts of the world to meet the demands better so it is now often called wagyu beef or kobe-style.  The cattle breed which produces this meat is predisposed genetically to create intense marbling.  It also has the highest unsaturated fat among all the breeds of cattle in the whole world.

Now, after knowing about its origin, how does wagyu meat taste like?

Actually, when it’s cooked the wrong way, it would taste lousy and bland.  People who tried cooking it at home for the first time often ended up with a disappointing flavorless meal.  However, if you cook it right, then you are surely up for a sumptuous, velvety, and even sweet tasting meal which lingers in the mouth for quite sometime. If you plan to cook wagyu at home, make sure that you use preheated cast iron on open flames.  It’s ideal to cook it this way.
